Step 1: In a small bowl, beat the eggs with a few drops of very hot water.
Step 2: Add the minced garlic, salt, pepper and mix well.
Step 3: Heat oil in a frying pan.
Step 4: Dip a bread slice in the egg mixture, covering both sides well. Fry the bread until golden brown on both sides. Set on a rack if you feel the need to drain, although these don't come out very greasy. Don't drain on paper towels or they will get soggy.
