Step 1: Preheat oven 350f
Step 2: Whisk together until blended the egg whites, sugar, gin, lime peel, salt and almond extract.
Step 3: In a large bowl toss the coconut with the flour, stir in the egg mixture.
Step 4: Grease baking sheets and drop by tablesponns 2 inches apart.
Step 5: Bake 15-18 minutes or until tops are lightly browned
Step 6: Remove from pans to wire rack and cool completely
Step 7: Dip bottoms of the macaroons into the melted chocolate, allow excess to drip off. Place on wax paper, Let stand until set
Step 8: Store in air tight container
