Step 1: Preheat the oven to 300 degrees Fahrenheit.
Step 2: Coat a small baking dish lightly with olive oil or cooking spray.
Step 3: Combine lemon juice and honey in a small bowl.
Step 4: Combine raisins, nuts, and butter in a separate small bowl.
Step 5: Cut apple in half from top to bottom and remove core with a knife and small spoon or with the tool used to cut melon balls.
Step 6: Coat the flesh of the apple with lemon/honey mixture by adding some to the empty core and rotating the apple.
Step 7: Place the apple flesh side down in the pan and bake for 10 minutes.
Step 8: Turn the apple over and fill the empty core with the raisin/nut/butter mixture.
Step 9: Top with any remaining lemon/honey mixture and bake an additional 15-25 minutes to your desired firmness.
Step 10: Serve warm, adding small amounts of blue cheese or extra sharp cheddar to the top after it's cooked if your meal allows for the extra fat and sodium.
