Step 1: Pork ... The night before you plan to cook your pork; mix the mustard with the seasoning blend and rub over the pork loin. Then, cover and refrigerate over night.
Step 2: Crock Pot ... Add the pork loin to the crock pot, and place the onions along the side.
Step 3: Sauce ... Add both cans of soup to a small bowl and mix to combine. Add a little wine to each can, and mix using a spoon to get all the soup left in the can. Then pour into the bowl and mix. Pour the sauce over the pork.
Step 4: Cover and Cook ... I like to cook on high for 2-3 hours, then low until the meat is done (about 3-4 hours). But, you could always cook on low for the whole time (about 8 hours). Now, obviously cooking times will vary. The size of the loin; and, the type of crock pot can really alter the cooking times. I have a new oval pot, and used a 3 1/2 lb roast. Cooking on high for 2 hrs, then low for 4 1/2 hrs worked well; but, I have also cooked a 4lb roast for 8 hrs on low. So as you can see, there are different ways to cook these; and, times can really vary.
Step 5: Serve and ENJOY! ... Remove the loin from the pot to a serving platter, and garnish with half the herbs. Add the other half to the sauce, and stir to combine. Serve over buttered noodles, rice, or mashed potatoes. Add a vegetable for a easy and delicious dinner.
