Step 1: Dill Sauce ... Perfect to make ahead. Add all the ingredients to a small bowl, and mix to combine. Cover with plastic wrap, and refrigerate until ready to serve.
Step 2: Salmon ... Add the salmon to a food processor, and pulse a couple of times, until you have a coarse chop. Then, add the cream, egg whites, scallion, dill; and, a pinch of both salt and pepper. Pulse a couple more times until all the ingredients are well combined. Check for seasoning(salt and pepper); and adjust if necessary.
Step 3: Bake ... Preheat the oven to 325 degrees. Lightly spray the loaf pans or ramekins with a non-stick spray, very lightly. Then, add the mousse, and place in a 13x9" pan. Add enough HOT water to the pan, so it comes up half way to your loaf pans or ramikens. The water will allow the mousse to cook slowly, and also create steam in the oven - this is absolutely a must.
Step 4: Cook 20-30 minutes on the middle shelf, until the mousse is set.
Step 5: Serve and ENJOY! ... As I said, this is an elegant dish; and, not something you make often. But, it is a great dish to entertain with. A ladies luncheon - add some pickled vegetables, roasted tomatoes; and, serve over baby greens with a hollandaise or dill sauce. How about a slice of the mousse with a poached egg, and hollandiase for brunch; or, simply serve over some greens with the dill sauce for a salad starter - and, add some crackers to serve as an appetizer. It really is delicious!
