Step 1: Lemon ... Zest the lemon first. You will need 1 teaspoon of the zest, and 1 teaspoon of the juice for the mascarpone topping. Then, you will need 1 tablespoon juice for the granita.
Step 2: Granita ... In a blender or food processor; add, the blackberries, sugar, creme de casis, lemon juice, water, and a pinch of salt; then, pulse until you get a smooth puree.
Step 3: Add the berry mix to a fine mesh strainer over a 13x9" glass pan, to get rid of any seeds. Using the back of a large spoon - press the berries mix through the strainer.
Step 4: Freeze ... Place in the freezer; and let it set at least 30 minutes. Then, using a fork, scrape, breaking up the frozen bits. Then, continue to freeze - and scraping every 30-60 minutes until the granita looks like shaved ice. It will look like a "snow cone," we all remember those, don't we? It will take between, 3-5 hours.
Step 5: Lemon Mascarpone Topping ... As the granita is freezing; add the mascarpone, heavy cream, sugar, lemon juice and zest, and vanilla to a small bowl, and, mix well to combine. Refrigerate until ready to use.
Step 6: Serve and ENJOY! ... Scoop some of the granita into a martini or wine glass (my favorite); or a small bowl of your choice. Top with a dollop of the lemon marscapone, fresh blackberries, and a mint sprig. It is elegant, easy, and delicious.
