Step 1: Poke each pepper once with a fork.
Step 2: Place on rack in the smoker and smoke for 2 hours at 250 degrees Fahrenheit.
Step 3: Remove and discard the tails.
Step 4: Place in a bowl and toss with the oil, garlic, salt and pepper.
Step 5: Enjoy!
