Step 1: In large bowl, add yeast, water and sugar. Stir until yeast is dissolved. Stir in milk, salt, egg, and garlic powder. Add cheddar cheese, onion, butter, and 3 cups flour. Mix well. Continue to add enough flour until dough chases the spoon around the bowl.
Step 2: Turn dough out onto floured table. Knead dough for 10 minutes, adding more flour as needed, until a smooth, elastic dough is formed.
Step 3: Place dough in greased medium bowl and flip dough over so that the top is also lightly greased. Cover with a clean kitchen towel and let rise for 1 hour in a warm, draft-free place.
Step 4: When the dough is finished rising, punch down dough. Turn dough out and knead for 8 minutes. Roll dough to 1/4 to 1/2-inch thickness.
Step 5: Cut dough into 3 to 4-inch rounds.
Step 6: Place buns 2-inches apart on greased cookie or baking sheet. Cover with clean kitchen towel and let rise for 45 minutes or until doubled in a warm, draft-free place.
Step 7: In small bowl, use a fork to lightly beat the egg white. Brush white onto each bun. Sprinkle buns with poppy or sesame seeds, if desired. Bake at 375 degrees F for 20 minutes or until buns are golden brown.
Step 8: Let cool on rack.
