Step 1: Bring the oil to medium-high heat in a skillet.
Step 2: Lay the potatoes down and toss in the onions.
Step 3: Check occasionally with a table knife to see the bottoms of potatoes; when golden brown flip them over.
Step 4: When crisped on both sides, drizzle with parmesan and serve.
