Step 1: Cut the focaccia loaf, sideways, into 3 equal rounds; lay the rounds on a foil lined oven tray and lightly toast under a broiler turning the middle cut so that it gets toasted on both sides.
Step 2: Lay the bottom round on a serving platter; cover with the dill cream cheese; lay lettuce leaves over; place the cooked bacon slices evenly over; place the cooked chicken slices over the bacon; place the roasted red pepper slices over the chicken; sprinkle the flaked parmesan over the red pepper; sprinkle the black olives and pepper over all. (I did not use the salt - enough salt in the other ingredients) Sprinkle the old sharp cheddar over.
Step 3: Place the middle toasted loaf slice on top; generously spread with the Seasoned Mayonnaise; lay lettuce leaves over; lay cucumber slices over lettuce; Sprinkle the jalapeno cheddar over; lay the red onion slices over the cheese; lay the tomato slices evenly over and lightly sprinkle with salt and pepper; lay lettuce leaves over.
Step 4: Generously spread the top slice, cut side, of the loaf with the Seasoned mayonnaise; place on top to finish the sandwich.
Step 5: Slice the sandwich into quarters. If you wish smaller sandwiches slice the quarters in half again.
Step 6: OPEN WIDE AND ENJOY!!
Step 7: Seasoned Mayonnaise:
Step 8: Whisk together all ingredients until well mixed. If you wish it thicker add a little more mayonnaise, a little at a time until desired consistancy; or for thinner add a little more balsamic vinegar, a little at a time.
