Step 1: First make the sauce; In a medium saucepan mix the juice from the pineapple can with cornstarch, then ketchup, vinegar, soy sauce and brown sugar, and bring to a boil, then boil until thickened stirring all the time. set aside while you cook the chicken.
Step 2: Season all the chicken cubes with salt and pepper. Add to a frypan that has some hot oil in it. Cook chicken until done, mixing all the time while cooking (cooking the chicken cubes time will be about 4 minutes).
Step 3: To the chicken that is in the frypan, add in the sauce that you prepared and the pineapple chunks heat through on low heat mixing to coat the chicken.
Step 4: Serve with rice.
