Step 1: RICE: Since the rice will take a lot longer than the beef; plan to start that as the beef marinates.
Step 2: BEEF MARINADE: Add the soy sauce, ginger, garlic, and corn starch to a bowl, and mix to combine. Add the beef, toss, cover with plastic wrap; and, let it marinate on the counter for 30 minutes. TIP: To get the steak cut in thin strips; freeze it first - just for 15-20 minutes until it is firm - it will be much easier to cut in thin strips.
Step 3: VEGETABLES: Prepare the vegetables and set them to the side. The stir fry is very quick cooking; so, make sure the vegetables are all ready to go.
Step 4: Sauce ... Add the soy sauce, brown sugar, garlic, ginger, broth, red pepper flakes, corn starch, and water to a small cup or bowl, and mix to combine; then, set to the side.
Step 5: STIR-FRY: Now, a wok is by far the perfect pan for this. But a good non stick or heavy pan will work fine. You need to get it to high heat; otherwise, your beef and vegetables will just steam - which is NOT what you want. You want to get a good sear, or crust, on the beef.
Step 6: Bring your pan up to high heat, then add 2 teaspoons of canola oil. Next, add the beef with any sauce in the bowl, to the hot pan; and stir often, until you get a nice sear on the beef. This will NOT take very long; and yes, the heat should be high (maybe a couple of minutes), is all it takes. Then, remove the beef, to a plate and cover to keep warm.
Step 7: VEGETABLES: To the same pan, add the peanut and sesame oil; then, add the broccoli, onions, and peppers; reduce the heat to medium high, and continue to stir often. You want the broccoli, onions, and peppers tender - about 3-4 minutes. You don't want the vegetables too big, or they will take too long to cook; you also want them to be crisp tender, not too soft.
Step 8: SAUCE: Add the sauce and the cooked beef to the vegetables, toss, and cook another minute or two to let the sauce thicken. If it seems a bit thick, you can add a bit more water or broth, if necessary. Taste for seasoning - you may want to add a bit more salt or pepper.
Step 9: Serve and ENJOY! ... Serve over the rice, along with a fresh salad, for a quick weeknight dinner. Fresh grilled peaches or pineapple is a great side dish.
