Step 1: Mix together all the ingredients except for the ribs in a large re-sealable plastic bag.
Step 2: Split the racks in half and add to the marinade.
Step 3: Allow to marinate at least 4 hours.
Step 4: Place in the smoker and smoke at 275 degrees Fahrenheit for 2 1/2 hours.
Step 5: Serve as is or toss with your favourite BBQ sauce.
