Ingredients

The ingredients are:
  • 2 Spanish chorizo links, cut in half moons (Spanish is the hard chorizo vs Mexican chorizo which is soft)
  • 3/4 pound green beans, trimmed and cut in 1" pieces
  • 1/2 pound yellow beans, trimmed and cut in 1" pieces
  • 1 medium onion, cut in quarters and thin sliced
  • 1 cup green Spanish olives, cut in half (you could always substitute black olives)
  • 1 cup vegetable or chicken broth
  • 1 teaspoon olive oil
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Chorizo ... Add the olive oil to a large saute pan and bring to medium heat. Add the chorizo and onions, and saute for 3-5 minutes until you get a little browning on both the the chorizo and the onions.

  • Step 2: Beans ... Add the beans and chicken broth to the pan and bring to a light boil. Then, reduce the heat to medium low, cover, and simmer until the beans are tender, about 5-7 minutes. Then, remove the cover, add the olives, and increase the heat to medium high; and, cook until all the liquid is gone (another 3-5 minutes). Season with salt and pepper if necessary. But, go easy on the salt, the olives are already salty.

  • Step 3: Serve and ENJOY! ... It is a very simple recipe; but, a very tasty side dish.
