Ingredients

The ingredients are:
  • 1 1/2 lbs sugar snap or snow peas (or a combination of both), stem ends / strings removed from each pod. (If this is not removed, you will find yourself having to spit it out when chewing, so you want to make sure to remove it).
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 1/2 tablespoons red wine vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup olive oil
  • Black pepper, freshly ground, to taste
  • 2 tablespoons sesame seeds, toasted

How to Make

  • Step 1: Blanch the sugar snap peas for 30 seconds in boiling water or until crisp tender. Drain well and arrange them in a serving bowl.

  • Step 2: In a small bowl, whisk together all remaining ingredients (garlic - sesame seeds). Pour the vinaigrette, over the pea pods and distribute well with a rubber spatula. Serve at room temperature. (These may be left to marinate in the refrigerator overnight; return to room temperature to serve.)
