Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 yellow onion, finely chopped (small onion)
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried chilli flakes
  • 1 can (400 grams) diced tomatoes (Italian)
  • Caster sugar, pinch
  • 1 packet (340 gram) tortellini (Barilla Colleione Three Cheese Tortellini)
  • 1 jar (190 gram) pesto (Barilla Pesto alla Genovese)
  • Basil leaves, to serve

How to Make

  • Step 1: Heat the oil in a saucepan over medium heat and add the onion and cook for 5 minutes or until soft and then add the garlic and chilli and cook, stirring, for 30 seconds and then add the tomato and bring to a simmer and then reduce heat to low and simmer for 5 minutes and then stir in sugar and season.

  • Step 2: Meanwhile cook the tortellini in a saucepan of boiling water following packet directions or until al dente and then drain and return the pasta to the pan and toss with pesto to coat.

  • Step 3: Divide the tortellini mixture among serving plates and top with the tomato mixture and season with pepper and sprinkle with basil leaves.
