Ingredients

The ingredients are:
  • 1 package (1 pound) frozen pizza dough (thawed, may use homemade dough as desired)
  • 30 grams chorizo sausage (1/2 of 4-in link, sliced VERY thin like deli-style pepperoni would be)
  • 4 large eggs
  • 1 small yellow onion (thin-sliced)
  • 1 clove garlic (finely minced)
  • 5 ounces cheddar cheese (shredded, 1 1/4 cup)
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons olive oil
  • Black pepper as desired
  • Flour and course corn meal, for dusting baking sheet

How to Make

  • Step 1: Preheat oven to 425F.

  • Step 2: Spread out pizza dough into a thin desired shape on a baking sheet that has been dusted w/flour & a little course corn meal.

  • Step 3: In a sml skillet, add 1 teaspoon of olive oil & saute the onions & garlic for about 2 min on med-heat.

  • Step 4: Add the sliced chorizo & let it brown for a few minutes. Set aside to cool.

  • Step 5: When cooled, spread the chorizo mixture evenly on the dough. Sprinkle w/the basil & shredded cheese.

  • Step 6: Break the eggs gently & place them evenly spaced on top of the dough. Drizzle the remaining olive oil over the eggs & chorizo.

  • Step 7: Top w/fresh cracked pepper. Cook for about 15-20 min until the dough is golden brown & serve immediately.
