Ingredients

The ingredients are:
  • 8 medium onions, thinly sliced (7 jumbo onions)
  • 2 large garlic cloves, minced
  • 1/2 teaspoon cayenne pepper, or to taste
  • Vegetable oil, as needed
  • 6 large eggs
  • 1 cup soft bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup minced fresh parsley
  • Salt and fresh ground black pepper, to taste

How to Make

  • Step 1: In a large skillet heat oil over medium-high heat (use enough oil to coat the bottom of your skillet) saute onions, garlic and cayenne in oil until soft but not browned (about 15 minutes) place the onions in a colander to remove as much of the oil as possible.

  • Step 2: In a bowl beat eggs; add bread crumbs, Parmesan cheese, parsley and onions; mix well.

  • Step 3: Spread into a greased 10-inch deep-dish pie pan.

  • Step 4: Bake in a preheated 350 degree F oven for 35-40 minutes or until a knife inserted near the center comes out clean.
