Step 1: In a large saucepan over medium heat heat 2 teaspoons of the oil. Add garlic and cook stirring constantly until garlic is fragrant (under one minute). Add broth, water and 1/4 teaspoon of salt and bring to a boil. Gradually stir in the grits. Reduce heat and cook, covered, stirring occasionally until grits thicken (5 minutes).
Step 2: Remove from heat and stir in spinach in batches until wilted. Cover and keep warm.
Step 3: Meanwhile stir together the remaining oil (2 teaspoons), Cajun season and remaining salt (1/2 teaspoon) in a bowl. Add shrimp and toss.
Step 4: Set a grill pan over medium heat until hot and then add half of the shrimp and cook, turning once until opaque in center (under 5 minutes). Transfer to plate. Repeat with remaining shrimp.
Step 5: Divide grits mixture among 4 shallow bowls and top with shrimp.
