Ingredients

The ingredients are:
  • FOR CHICKEN
  • 3 pound whole chicken (cut up)
  • 2 tablespoon olive oil
  • 2 yellow onions ,chopped
  • 2 whole limes, juiced
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon cardamom
  • 1 tablespoon sumac
  • 4 cups water
  • Garnish
  • 1 tablespoon sunflower seeds
  • 1 tablespoon pine nuts
  • 1 tablespoon almonds (flaked)
  • FOR CARMELIZED ONIONS
  • 2 yellow onions, minced
  • 2 tablespoons sumac
  • 1/4 cup olive oil

How to Make

  • FOR THE CHICKEN

  • Step 1: Fry onions in oil.

  • Step 2: Add spices, chicken add broth, cook until chicken comes off bone.

  • Step 3: Meanwhile, fry onions until caramelized.

  • Step 4: Add sumac, when chicken is done.

  • Step 5: Meanwhile, measure stock adding right amount of rice with stock, then make rice with stock. pour sauce over broil 10 minutes.

  • Step 6: When skin is browned, add nuts last coupla minutes.

  • Step 7: Serve with rice they served with flat bread that was soaked in stock and heated , i prefer rice.
