Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Line a large, shallow baking pan with parchment paper and set aside.

Step 3

In a large bowl, combine oats, coconut, almonds, pumpkin seeds, sunflower seeds and flaxseed; mix well.

Step 4

In a medium bowl, whisk together honey, peanut butter and cinnamon until well blended.

Step 5

Add peanut butter mixture to oat mixture and stir using a wooden spoon until oat mixture is completely coated.

Step 6

Spread oat mixture evenly in prepared pan.

Step 7

Bake for 10 minutes.

Step 8

Remove pan from oven, give granola a stir, then bake another 10-12 minutes, until granola is golden brown and feels dry to touch.

Step 9

Be careful not to burn it.

Step 10

Let it cool.

Step 11

Stir in dried cranberries.

Step 12

Store in an airtight container for up to 5 days.

We enjoyed this granola lots. I did over bake it a bit (it goes from almost done to overdone quicker than quick). The combo of the nuts and craisins makes it yummy. The end product tasted slightly of peanut butter, but I think it's because of the overbake. I did use both almonds and pecans and decided not to chop the craisins, other than that followed all as written. It can be addictive. Thanks, Luvcookn, for sharing. Made it for Billboard tag.
