"I keep coming back to this recipe. McCormicks rotisserie seasoning is the best one to use. This recipe produces a chicken with crispy skin and moist meat. Timing depends upon how big a chicken you use."
Preheat oven to 350F.
Wash chicken and pat dry.
Half the lemon and squeeze the juice over the top-stuff the squeezed lemon halves into the cavity.
Liberally, sprinkle the chicken with seasoning on both sides.
Place breast side down on a v-rack, placed over a roaster pan.
Pour the chicken broth into the pan.
Roast un-disturbed, until golden brown- about 1 hour , more or less.
Using wads of paper towels, flip the chicken breast side up- sprinkle with more seasoning if needed.
Roast again un-disturbed for about another hour, more or less, or until the drumstick moves very easily.
Remove from the oven and let sit for 10 minutes before slicing.
