"My mom used to make these every Christmas for us when I was growing up, and they bring back special memories for me, especially around the holidays. We have been eating these for 50 years! These are my all time FAVORITE cookies :) They make a lot of cookies, and the amount really depends on how thick you actually roll the dough, and how thin or thick you cut the cookies. The cooking time is for EACH batch of cookies, and the prep time does not include time to chill dough."

Step by Step Method

TO MAKE THE DATE FILLING


Step 1

Combine dates, sugar and water in a pan and cook until thick (about 10 minutes).

Step 2

Add nuts to mixture, mix, and let cool. Set aside.

TO MAKE THE COOKIE DOUGH


Step 3

Cream shortening and add brown sugar gradually.

Step 4

Add eggs, and beat well. Add to the other ingredients, and mix.

Step 5

Divide into 2 parts, and make 2 round balls.

Step 6

Chill for 1 hour, or until ready to bake.

Step 7

Preheat oven to 375.

Step 8

Make 4 balls from the 2 large balls of dough.

Step 9

Roll out dough to 1/4 inch thick, and spread date mixture all over the top to the edge of the dough. Roll into logs.

Step 10

Cut into slices 1/4 inch thick, and place on greased cookie sheet.

Step 11

Bake in 375 oven for 10-12 minutes.

Step 12

Cool on cookie racks and store in a plastic container with lid, or a cookie tin.

I just got done packaging these up to send to my son. He is going to love these delicious cookies! Had to taste test and thumbs all the way up for the hubs and I!! Tip: When measuring out the flour, DO NOT scoop the measuring cup into the bag of flour. Instead, spoon the flour into the measuring cup, then level off with the back of a flat knife. That way you won't get too much flour, making the dough dry and hard to work with. Enjoy!

This recipe needs to be fixed. Its says 12 tsp of salt. As you know this is not any easy cookie to make. After putting in my time and effort and money they were ruined because way too much salt.

I could not wait to have my first cookie after coming out of the oven. They looked so pretty. I sat down and had one with a glass of milk. They are super delicious and I am sure my family will love them today as we celebrate Christmas and head to the dessert table!

Tested these earlier to make as Xmas cookies, making one roll and freezing the others. My husband was the taste tester and these passed with flying colors! Super good and the nuts are a must. I will be making the rest of them shortly for my cookie trays!
