"This recipe was in a Spam cookbook that I received this past Christmas. As a lot of people know,Spam is very popular in Hawaii. According to the cookbook that I found this in,Sam Choy is Hawaii's " Culinary Ambassador ". It's served at three of his restaurants.There wasn't any oil or butter to cook the onions and Spam in,so I used 1 1/2 tablespoons of margarine.If you like you can use more than one fried egg per serving.Also there weren't any times given for prepping and cooking,so those were just "guessed " at. Step by Step Method

Step 1

Over medium heat in a medium size skillet,melt margarine then add diced onion and spam.

Step 2

Saute' until onion is soft and spam is lightly browned and set aside.

Step 3

In a small saucepan,add gravy mix and water stir well and bring to a boil.

Step 4

Reduce heat and let simmer for 1 to 2 minutes.

Step 5

Take two medium size bowls and to each bowl add 1 cup of rice.

Step 6

Place half of Spam/onion mixture over each bowl of rice and top with desired amount of gravy.

Step 7

Then top each with any style fried egg.
