"Economical, quick and tasty. Cook a couple of extra potatoes the night before so you can just mash them when making the salmon cakes - you want plain mashed potatoes, no added ingredients."

Step by Step Method

Step 1

Mix all the ingredients except crumbs, stir well.

Step 2

Form into 6 patties, coat with crumbs.

Step 3

Heat pan, medium high heat, add oil and fry the patties until golden brown on each side and heated through. Approximately 5 minutes per side.

I made this for mine and my SO's dinner,and most importantly the " THINK PINK " event in FFF. Since a few changes were made to the recipe,I was slightly hesitant to post photos and a review. The changes are as follows. I used a 14.75(418g)ounce can of salmon. The onion was upped to 1/4 cup and the amount of potatoes were reduced to 1/2 cup. The amount of flour remained the same.I didn't have fresh parsley, so about 1 1/2 teaspoons of dried were used. Unfortunately I didn't have the Panko crumbs, so regular dried breadcrumbs were used. To get a crusty outside texture, I pan fried in a cast iron skillet. We both thought the taste was a " Good Solid 4 *'s ". And I'm very pleased to be the first one to MERP this recipe. :) " Keep Smiling :) "
