Step by Step Method

Step 1

Drizzle 1 tablespoon olive oil in a cast iron skillet and bring to medium-high heat, generously season the pork chops with salt and pepper and brown both sides; remove from skillet and set aside.

Step 2

Drizzle another tablespoon of olive oil into skillet and add onion and mushroom; cook until onion start to soften while scrapping up bits of pork.

Step 3

Whisk together the vegetable broth and corn starch and pour into skillet.

Step 4

Add the browned pork chops and remaining ingredients and place in a preheated 350 degree Fahrenheit oven and cook for 1 hour.

Step 5

Serve over mashed potatoes.

Mr picky loved this dish ,I cooked the carrots for the potatoes in with it because everything must be mushy lol. It's really nice for the chops that are on sale right now

We really enjoyed the pork chops...I just love the smell of onions and mushrooms cooking...it's like the smell of fresh mowed grass...I cut the recipe in half and because I always slice my thick pork chops into two servings I cut the oven time in half too...the chops came out perfect and the gravy was spot on...I used chicken broth instead of vegetable broth because that's what I had on hand...I did add a pinch of salt at the end of cooking...made for Billboard tag game...served with mashed potatoes and corn...

Taste was great, gravy was to thin for our liking but that could be because we did not cover it in the oven ( did not say should cover it). Over all would make again with proper procedure.
