Step 1

Blanch beans by bringing a large pot of salted water to a rolling boil and cooking covered 1 1/2 - 2 minutes after the water returns to a boil.

Step 2

Drain in colander and rinse under cold running water till cool to touch.

Step 3

At this point beans can be stored in the refrigerator up to 24 hours in an airtight plastic bag.

Step 4

Blanch almonds by pouring boiling water over them and draining, then pouring cold water over them to stop further heating. Redrain. You can pinch or rub off the skins at this point if you like.

Step 5

Sauté almonds and mushrooms briefly in the butter.

Step 6

Add the green beans, then the salt and pepper.
