Step 1
Heat oven to 500°F. Line a 15x10-inch baking sheet with foil. Spray foil with nonstick cooking spray.
Step 2
In a sealable 1-gallon plastic bag, mix together the sugar, flour, salt, chili powder, chipotle chili powder and garlic. Shake and massage bag until well blended. Add shrimp, seal bag, and shake bag until all shrimp are well coated.
Step 3
Arrange coated shrimp in baking sheet in a single layer. Bake 7 to 9 minutes or until sugar is caramelized. Remove baking sheet from oven. Using a rubber spatula, turn shrimp. Squeeze lime over shrimp.
Step 4
Place shrimp on a serving platter, and serve immediately while still hot.
Step 5
TIP: Have plenty of toothpicks nearby, so guests can pierce the shrimp to grab them, and thereby avoid sticky fingers.
