Calypso Shrimp Linguine

"This is one of my favorite menu items at Bahama Breeze Island Grille. It's so delicious and has a distinct Caribbean flair. The cayenne pepper is not overpowering, so it should be OK even for mild palates. But even so, you can always increase or decrease the cayenne to suit your own preference. The restaurant uses linguine for this recipe, but fettuccine or spaghetti could easily be used instead."

Step 1

Place all of the broth ingredients (broth, clam juice, garlic, blackening season, cayenne and thyme) in a bowl and mix well with a wire whip. Set broth aside. (Or, if not using immediately, cover broth and refrigerate until needed.)

Step 2

Cook pasta according to package directions, and drain well. Set cooked pasta aside.

Step 3

Season shrimp with salt and pepper.

Step 4

Heat a large skillet over medium heat and add the butter. Add shrimp and scallions, and cook until shrimp begin to turn opaque. Add the Calypso Broth and cream. Bring to a boil for a few minutes or until it is reduced and starting to thicken slightly.

Step 5

Add the drained pasta to the skillet, and cook another 2 minutes (to heat the pasta).

Step 6

Garnish with diced tomatoes, and serve immediately.

An absolute winner! We loved it!! Having extreme weather dd has been been having lunch here which sees me enjoying new recipes. These days with the numbers in our area we are shopping for most part small town Saskatchewan some items unavailable others like a tiny box of cherry tomatoes eight dollars so no tomato garnish. I had to make my own blackening seasoning which was excellent, and used frozen shrimp with the end result not only one we loved but one that has been added to our Family Favorites Cookbook. A repeatable for sure.

Delicious! Shrimp is one of our favorites and this looked very good, so I decided to make it for company coming. I used 1/4 tsp cayenne, and that satisfied everyone, because everyone emptied their plates in a jiffy. I made a big garden salad to have with it, and it was enjoyed by all!

Delicious! Made as written and everything came together beautifully. I used fettuccine this time because it's what I had on hand. We had a pineapple, strawberry, blueberry, tomato, onion and spinach salad with Raspberry Walnut Vinaigrette with it. Yummy!

What a quick and delicious dish...I cut the recipe in half and also cut back more on the butter...which might be the reason why the blackening seasoning was a tad dominate...we really enjoyed eating it...I served it with a green salad and garlic bread...made for "FYC" tag game...
