"I found out there are a ton of skillet zucchini recipes out there. My sis gave me a huge zucchini that I am going to use. This is a 30 minute recipe."

Step by Step Method

Step 1

Put the butter in a medium skillet on medium high heat to melt it.

Put in the garlic, oregano, rosemary, and thyme.

Add the chicken. Let everything cook for 3 to 4 minutes on each side or until the internal temperature of the chicken reaches 165 degrees.

Place the chicken on a plate and set it aside.

Place the chicken back into the skillet and cook for a couple more minutes.

Both the chicken and the zucchini were amazing. Perfect amount of garlic and butter, and the herbs made the whole dish pop. I did cook the chicken longer than instructed (I like REALLY cooked chicken) but other than that, did as instructed and the results were divine.

Scaled back for one serve using two skinless boneless thighs with a weight of just over 7 ounces after removing excess fat (which is closer two serves of meat) but went ahead with the rest of the recipe for one serve adding some carrot and cauliflower to the veg mix and had a thoroughly enjoyable and delicious dinner, thank you WAIGEN made for Players Favorites - 5 Star Gems.

Really Good Chicken!! The combination of fresh herbs is optimum (except used dried oregano - didn't have fresh). The chicken browns so nicely and turns out crunchy on the outside and still so tender and moist. The boneless chicken thighs really help and I don't think I'd opt for using chicken breast for this reason. I did season the chicken prior to adding to the skillet and added the herbs and garlic when cooking the zucchini because I didn't want to have them burn. Such a Yummy chicken dish that will see repeats. Thanks so much, WAIGEN, for sharing this lovely recipe. Made it for Players Favorites - 5 Star Gems.

Wonderful...simple and delicious! I did take a couple of liberties with this recipe. I had cooked chicken breasts which I cut up, used dried herbs and added some peas at the end of cooking. Very satisfying dinner. Thank you for sharing! Made for Pick Me! tag game.
