Step by Step Method

Step 1

Mix together the hot pickled pepper juice, olive oil, 1/2 teaspoon dried oregano and garlic cloves in a large re-sealable freezer bag.

Step 2

Add the fish and swish to coat; refrigerate for 2 hours turning after one hour.

Step 3

In another plastic bag, toss together the remaining ingredients, except for the vegetable oil.

Step 4

Remove the marinated fish pieces and toss in the flour mixture to coat.

Step 5

Heat the oil over medium-high heat and cook the coated fish pieces until cooked through, the time will vary depending on thickness of fish pieces, they will flake easily when poked with a fork.

Step 6

Serve.

Now here is a good reason to save pickling pepper juice. I didn’t necessarily have “hot pickled pepper juice” but did have some pickling juice from onions, therefore, to compensate added some hot sauce. Also, used a coarse cornmeal (by accident, really), and in place of tilapia, used haddock. What a yum, yummy fish it made, came out crunchy and delicious. We devoured it. Thanks, Bea, for sharing.

Great fish -- used the pepper sauce from a jar of hot pickled jalapeños, used regular flour instead of the flour specified and skipped the hot pepper flakes and cayenne pepper. Very good fish -- it would have been more spicy if we used the pepper flakes and/or the cayenne pepper -- but we really enjoyed this fish as prepared. Thanks for sharing!

Very tasty fish...I really enjoyed the touch of heat...next time I think I'll increase the cayenne pepper to add even more heat...made for "Bill Board" tag game...
