Step by Step Method
Step 1
Preheat oven to 350 degrees F. Set oven rack to second-lowest position. Grease and flour an 8 x 5-inch loaf pan.
Step 2
In a bowl combine the flour with next 5 ingredients. In a small bowl whisk the eggs with oil and vanilla until well combined then mix in the mashed bananas; add to the dry ingredients mixing with a wooden spoon until just combined. Gently mix in the blueberries.
Step 3
Transfer to loaf pan. Bake for about 1 hour and 10 minutes or until the loaf tests done. Cool 10 minutes in the pan then remove to a wire rack to cool completely.
