"I found this recipe in an Everyday Food Magazine and I thought this sounded odd. I just had to try it, just because it called for bacon and everything with bacon is good!! I really enjoyed this recipe served it with toasted English muffins."

Step by Step Method

Step 1

In a large skillet, cook bacon over medium-high heat, stirring occasionally, until fat is rendered and bacon is lightly browned, about 20 minutes.

Step 2

With a slotted spoon, transfer bacon onto a paper towel to drain.

Step 3

Pour off all but 1 tbsp fat from skillet (reserve for another use); add onions and garlic and cook until onions are translucent, about 6 minutes.

Step 4

Add vinegar, brown sugar, maple syrup and coffee and bring to a boil, stirring and scrapping up the brown bits from skillet with a wooden spoon, about 2 minutes

Step 5

Add bacon and stir to combine.

Step 6

Transfer mixture to a 6 quart crock-pot and cook on high, uncovered, until liquid is syrupy, 3 1/2 to 4 hours.

Step 7

Transfer to a food processor and pulse until coarsely chopped.

Step 8

Let cool, then refrigerate in airtight containers, up to 4 weeks.

Oh wow this is really good! First off, I was expecting "Jelly or jam". It's more of a topping or relish. I read some stuff on the internet and there are restaurants that put this on burgers and on egg sandwiches. I put mine on #29073, Coffee Pancakes

I too saw this recipe in an everyday food magazine and wanted to try it then and I forgot about it. So when I saw it here I had to try it. This was a bit weird for me, the combination of sweet and salty is nice, but I just found it, well, weird, lol.
