I have been making this recipe a few times in the past months.
There are so many uses for this recipe ~ toss or serve on top of pasta, bruschetta, pizza, cheeseboard, grilled meat or fish. The way you use this recipe is up to you, but you will not be disappointed.

Wow it looks like a restaurant commercial! I don't know what a confit is but I think I could eat it on however you served it to me!

Confit is a food that is cooked in oil or water over a longer period on a lower temperature.
The flavors are more intense when cooked this way.

Love the photos, tomato lover that I am will be looking to this recipe when my tomato crop ripens - seeing as I Iive in Saskatchewan it will be awhile!

I hope you try it Gerry, it is a great recipe. Hope you have a better Tomato season than we had this year. I think it was the worst crop I have ever had.

Love that photograph with the oil being poured over them. All are great photographs. Humm froze some whole cherry tomatoes last year might dig them out of the freezer and try them with this!
