Sourdough Deli Rye

The rye is very similar to:

but with 33% of the flour being medium rye flour (from King Arthur flour Co.) and molasses and caraway seed. If interested I can post the recipe later. This is a good rye sandwich bread that rises faster than most sourdoughs. I let the dough rise overnight in the fridge for flavor development.

Looks WONDERFUL! I was just thinking about making some rye, looking forward to the recipe.

By the way, in my recipe spreadsheets, I call this "Made Up Sourdough Rye", so there are no real rules here. Just what I like from making a bunch of other folks' ryes. Feel free to make it an onion rye or a limpa rye or a sweeter sandwich rye with milk and brown sugar.....ect.
