I'm planning to mix up some sourdough biscuits today and put in the fridge to 'ferment' overnight. Have been baking with sourdough for the last week or so, maybe it's time to make some commercial yeast bread . . . maybe ciabatta or focaccia.

Maybe I confused you Galley. The problem NEVER was rising. My bread always rose just fine. The steam during rises makes the texture of the finished bread different. And actually there isn't or never was a problem. I just thought I would share what I found. The steam seems to make the texture better for some reason. That's all. ;)
