We had our Memorial Day Dinner on the 26th.

Shapes that is a perfect Memorial Day Meal - Wish I could share it. The bacon, Cheese burger looks Mmmmmmmmm Lovely Photos

Well we had our cookout. We were eating when I remembered we hadn't taken any pics. Sorry everyone. IT was hectic, hubby grilling and I was inside trying to get it all put out. My daughter was a big help. It was good food and great to be with family and friends.

We were grilling all weekend long, starting on Friday, when we had Mexican. I know it's a lot of food and pics, but I do cook every day just about, and I do scale the recipes when I can. Otherwise, I like having a *couple* leftovers for lunches or in the freezer. So pardon my bombing with so many photos. I hope all the recipes are up- if not, they should be by tonight. Carol needs a holiday too. 8-)

which you're going to hate me because it tasted as good as it looked but-
I lost my scratch paper where I wrote down what I did and I am a stickler about keeping the recipe exactly as you see it, but I cooked so much stuff I couldn't be sure of everything I did, especially a couple days later. :lol:
But it *does* have 3 small squash (2 zukes and a crookneck), garlic, red onion, small sweet peppers- one red, one yellow (you could use 1 regular bell pepper), salt, pepper, olive oil, and epazote. That may have been it, but I am not 100% certain.

On to Saturday, which was my *Asian* day. We had the appie, split the small tail (I had 2 but used the other in something else sometime back), had the shrimp, and also the bean salad. There is actually more bean salad than I normally would have made, but the wax beans came packaged, so I just used them all.

Sunday we did barbecue some pork steaks as well as some grilled hot wings.
I didn't take photos as I wasn't using recipes.

Monday morning was a nice breakfast- I made some chilaquiles and we had them with bloodies. Nice to finish off the tomatillo salsa which I had made for the poblanos.

Dinner was Persian. I *had* to buy the lamb chops- they were at such a bargain price I would not have forgiven myself if I left them at the market. The poor things needed a home- it was the least I could do. :lol:

Sue what can I say - Fantastic photos and menus. I have scrolled up and down your photos several times - everything looks so good. The eggs Chilaquiles Verde is saved. I wanted to save the stuffed mushrooms but I guess the recipe isn't up yet. I am going to go over each recipe again because I know there are several more that I will be trying.

Sue you really know how to cook!!!!

I am so late for the party but I had a wonderful time going down memory lane with all of you as well as enjoying the awesome photos! Have to appreciate the sharing of the wonderful photos, recipes and ideas, many of which are already printed and ready to go for my summer gatherings. :)
