I will be going over to a friends during the day for his version of the 4th. Sarasota hosts their big Grand Prix Offshore Boat Race during that weekend and it is absolutely CRAZY anywhere near the water or beach. I did it for many years and it is just NUTS. So my poker buddies started this a few years back and it is fantastic. He starts around new, and there is food pretty much all day long. He also does his own small fireworks display at night. He will be roasting a whole hog in the fire pit; he also will be smoking brisket. Then everyone else brings something. Many come early, leave, go home with family or to other parties and then go back for the fireworks. About 100 people throughout the day.
Me and 4 other poker buddies are doing the following recipes that will be cooked throughout the day. These are some of my favorite recipes and were requested, so I didn't get much of a say. My 3 friends will be helping me prepare/make, smoke the chicken and salmon here, and then help me cook the rest at the party.
Corn on the Cob with Four Different Flavored Toppings About 10 dozen, with all 4 of the toppings.
Bloody Mary Steak with a Blue Cheese Sauce About 10 skirt steaks.
Smoked Citrus Chicken 6 chickens
Smoked Salmon 2 whole salmons
Vegetable Stuffed Zucchini 40 squash (80 halves) and ...
Grilled Sausage in Beer ... No recipe. Add the sausages to pan on the grill; add 1 bottle of beer and 1 tablespoon butter. Simmer 10 minutes. Then transfer to the grates to brown. Dip 2-3x as they grill to keep them moist and flavorful. About 80 sausages.
These are also my favorite recipes that I know a couple of my friends asked me for and they will be taking as well:

Mom's Classic Potato Salad

We often smoke a pork shoulder for Canada Day but this year their will be no special Canada Day meal as both DH and I are working. I have not posted the recipe yet but there is really nothing to it. I marinate the roast in Apple juice for 24 hours then remove it from the marinade, pat it dry and place it directly on the smoker grates, fat side up and then smoke it using applewood or alder chips for about 8 to 10 hours or until the meat thermometer reads 175 degrees.

I wis I was making again this weekend, lol...... That is the one I made a few weeks back.
I'm looking through my reviewed recipes and my own to see what would be great for Canada Day or Independance Day as far as beans and burgers and I must re-post this one as this was so good and would be perfect for the occasion.
