BANNER BY TINK

Every good soup starts with a really tasty homemade stock, stocks can be made from chickens, turkeys, beef , veal in particular makes a wonderful stock, and fish and veggies.

The following with thanks to Wikipedia, the free encyclopedia.

Stock is made by simmering various ingredients in water, including some or all of the following
Meat
Leftover cooked meat, such as that remaining on poultry carcasses, is often used along with the bones of the bird or joint. Fresh meat makes a superior stock and cuts rich in connective tissue such as shin or shoulder of beef or veal are commonly recommended, either alone or added in lower proportions to the remains of cooked poultry to provide a richer and fresher-tasting stock. Quantities recommended are in the ratio of 1 part fresh meat to 2 parts water. Pork is considered unsuitable for stock in European cooking due to its greasiness (although 19th century recipes for consomme and traditional aspic included slices of mild ham) and mutton was traditionally avoided due to the difficulty of avoiding the strong tallowy taint imparted from the fat.
Bones
Veal, beef, and chicken bones are most commonly used. The flavour of the stock comes from the cartilage and connective tissue in the bones. Connective tissue has collagen in it, which gets converted into gelatin that thickens the liquid. Stock made from bones needs to be simmered for longer than stock made from meat. Pressure cooking methods shorten the time necessary to extract the flavour from the bones.
Mirepoix
combination of onions, carrots, celery, and sometimes other vegetables. Often the less desirable parts of the vegetables (such as carrot skins and celery ends) are used since they will not be eaten.
Herbs and spices
The herbs and spices used depend on availability and local traditions. In classical cuisine, the use of a bouquet garni (or bundle of herbs) consisting of parsley, bay leaves, a sprig of thyme, and possibly other herbs, is common. This is often placed in a sachet to make it easier to remove once the stock is cooked.
Today, ready-made stock and stock cubes consisting of dried, compressed stock ingredients are readily available. These are commonly known as bouillon cubes, as cooking base in the US, or as Oxo cubes in Britain, after a common brand of stock cube sold there.

Sandwiches ! AWWW heavenly sandwiches !! In an endless variety of good breads and content !! With thanks to the Fourth Earl of Sandwich. !!
Open , closed, fried, roasted, grilled, Delicious in any way imagined !!

Here’s an early sandwich recipe…
(with thanks to an article by Linda Stradley.)
1840 - The sandwich was introduced to America by Englishwoman Elizabeth Leslie (1787-1858). In her cookbook, Directions for Cookery, she has a recipe for ham sandwiches that she suggested as a main dish.
Ham Sandwiches - Cut some thin slices of bread very neatly, having slightly buttered them; and, if your choose, spread on a very little mustard. Have ready some very thin slices of cold boiled ham, and lay one between two slices of bread. You may either roll them up, or lay them flat on the plates. They are used at supper or at luncheon.
1900’s - The sandwich became very popular in the American diet when bakeries started selling pre-sliced bread, thus making sandwiches very easy to create. Sandwiches became an easy, portable meal for workers and school children alike.

Can I add one suggestion.

I know I have 4 recipes that I added to my sandwich recipe book just last week JUST for this event.

They were there, I counted them. But today they are not showing up.

Also, I encourage people to do a search for "sandwich or sandwiches; sammy or sammies," wrap or wraps, quesadillas; pita; burger or burgers. It seems inconsistent what comes up even doing the advanced search. I did a search for burger and got "X" amount and then did a search again and got a different amount.

I'm sure there are tons of great recipes out there, but you got to look around, same for soups and chowders, bisques.

Just a thought. I am still trying to clean up my recipes and add them to all the appropriate recipe books, but I wanted to make note of that.

I hope this is ok to note.
