Menu Planning for the Week of June 23th through June 29nd

Weather really changed my weeks plans with work; but after car problems, the dentist (2x), and it seemed that every night changed; I got through making every meal planned. I hope everyone is having a nice weekend and upcoming week.

Chicken and dumplings (recipe to be posted); tomato and mozzarella salad

SUN ...
No soup or bread this week (enough in the freezer)
Dinner: Leftovers (Caribbean pork and rice from Fri) maybe into a stir fry

MON ...
Lady #1 and #2: Caribbean Pork Tenderloin; jasmine orange rice; sauteed green beans; fresh fruit
Me: Something Asian flavored with salmon; cold peanut salad; fruit - not sure yet

TUES ...
8 layer meatloaf; glazed carrots; iceberg wedge w/thousand island (homemade)

WED ...
Lady #1 and #2 w/guests: Roasted artichoke and olive crostini; salisbury steak w/mushrooms; mashed cauliflower and potatoes; layered salad (recipes to be determined)
Me: Meatloaf sandwich; chips or fries; of course pickles

THURS ...
Lady #3: Soy glazed salmon; cold peanut salad; sauteed bok choy; orange pound cake
Me: Out - sushi or Mexican

FRI ...
Lady #1 and #2: Some event at their Clubhouse
Me: Work, out with friends, or I'll invite my g/f over for dinner
Maybe, crock pot brisket; w/veggies; egg noodles and a new salad or slaw

Meal #1 Chicken Parm w/whole grain pasta (didn't get to make it last week), bf requested, probably with a side salad, maybe some homemade bread or rolls
Meal #2 Rosetto Beef Ravioli with some of the leftover pasta sauce from the Chicken Parm. More salad on the side.
Meal #3 Grilled Honey Teriyaki Chicken Breasts, with broccoli and some kind of salad
Meal #4 Leftovers
Meal #5 whatever my dd requests this week or grilled bratwurst
Meal #6 eat out or something from the freezer (pizza)
Meal #7 Leftovers? (or another soup/sandwich night)

Bf would like me to make some apple pie.

Sounds good ladies. For the first time in weeks I have it together enough to post plus I'm pretty excited by my menu this week. :)

Saturday:
goulash
homemade rolls

Sunday:
alaskan ale marinated salmon (on the grill???)
homemade rice pilaf
peas

Monday:
orzo chicken salad with goat cheese

Tuesday:
quesadillas with leftover salmon, cream cheese, goat cheese, and roasted red peppers with a chipolte cream sauce
corn salad

Wednesday:
turkey burgers on homemade buns
roasted potato salad

Thursday:
blue cheese and beef rollups with horseradish sauce
blue cheese slaw

Friday:
chicken broccoli casserole (maybe, depends on the weather)

Awesome menu!! Great job

Love the quesadillas and the goulash. Goulash is always a favorite of mine. But a nice variety. And like me, and they don't get it all made ... just freeze and make it the next week. That is why I try to do. Even if it is 2-3 chicken thighs to freeze. I can take them with some other ingredients and make quesadillas, frozen corn, black beans, onions, salsa; and make quesadillas. Add a salad or slaw and a cup of soup and dinner. I never throw out anything.

But I love the menu!

I agree - I might even use your menu as a guide and make similar recipes one week (or yours if any are posted). Really sounds good!
