Fried Eggplant

I will post the recipe tomorrow...too tired tonight. This is just a lovely way to eat eggplant. I make with a sauce made from mayo, spicy southwest mustard, and a bit of ketchup, its delicious. Recipe is now posted. Fried Eggplant

Thanks Bea, its hard to photograph fried things as these. They look burnt but they weren't. The crackers and bread crumbs get quite dark, but they weren't burnt. Hard to explain!

looks nice and crisp, maybe i would like it done like that, but could never get DH to eat it.

I love it too. Looks fantastic. And no, they are not burnt. Brown, yes ... the skins are black and they get brown; but, they look perfect.

Love the sauce too!!! Very nice, and great pics.

#3 and #5 have me waiting for the recipe. They do not look burnt, they look cooked!

Oh shapes you can do that to any of my photos! I get so excited posting a new pic, I forget to put that. But honestly, anytime you want to play around, please do and share. Its all about learning! ;)
