I hid its little face for the squeamish. But I whacked the head right off with a knife when I went to serve it up so no matter. But yeah, you grill it with the head on. It gets wrapped in foil anyway while it's grilling.

It tastes similar to me like flounder but a bit firmer and sweeter. It is delicious. One thing my friend just mentioned to me ... it is being farmed for commercial sales which I didn't know. But, still that isn't available in our area.
