Carrots with Ginger and Scallops

This carrots with ginger recipe is a keeper It is from an old 1999 Bon Appetit and I will post it in RZ. It has orange juice and fresh ginger that you simmer the carrot rounds in MMMm . It brings out a lovely rich color in the carrots The scallops have a Mango, chickpea lite curry sauce. The sauce was from Pam at the farmer's market Very very good. You can't see it but there is tofu pasta under the sauce. Great Sunday dinner
