A mix of carrots, parsnips, mushrooms, onions, potatoes, egg plant, celery root, and garlic. Olive oil, fresh herbs (rosemary, thyme, oregano and parsley), salt and pepper, and my secret ingredient ... 2 tablespoons diced tomatoes. Mix it all together and roast. Delish. 400, middle shelf for 25-35 minutes on a baking sheet lined with parchment paper. Easy Peasy!
