That piece of barramundi was one of the nicest pieces of fish I have had in a long time, the flesh was moist but flaked using the fork, no knife required. Looking forward to trying the recipe with salmon skin on, which about $5/kilo than the barramundi, the barramundi was just under 200 grams with skin on and only took 12 minutes to cook to perfection, I did fold back the skinny bit at the end to even out the thickness.

I wish we could get Barramundi here - I had it in Australia and loved it. I have never seen it here not even frozen.
