Just added some Peas & Sauerkraut. Just enough left overs for two from last Sunday

I've already said the Irish part of me would love the original dish,but
DANG the German part of me would dive into that in a heartbeat.

That looks really good. I made a corned beef last Sunday; delish! I put it in a pot of water and brought it just to a boil, to release some of the salt. Then put it in a pan lined with foil, mixed some brown sugar and dijon mustard and coated the corned beef with it. Covered with foil and baked for 2 1/2 hours at 350°F. Then uncovered it and broiled the top to brown it. Wow was it good. Then the next night I made reubens , and the next night homemade corned beef hash with eggs on top. We love corned beef, but it's so salty, we don't have it very often.
