Left Overs

For Christmas we always have fresh seafood as part of our Christmas fare and usually end up with left over crab and I also had some left over boiled eggs so this recipe was perfect http://www.recipezazz.com/recipe/crab-egg-salad-6160 and I still have some left over for lunch today which I will have with a garden salad, yesterday I had it as an open sandwich.

When I made it I scaled it back for eggs as that is what I had left over from Christmas day but only put in half as much crab and added some lobster meat we had left over and I felt that was plenty of meat to go with the eggs and put in less mayo and ranch dressing as I don't like it overly wet.
