Apples

Post by Dissie » Mon Oct 13, 2014 10:15 pm

I picked a big bag of apples from my moms tree when she was moving. It's been over a month, and I had forgot they were in the basement fridge. I was doing laundry and opened the door and I have a HUGE bag of apples. I grabbed one and it was still firm. Tasted it, and it was fine. So now what? I have a big bag of apples. Besides applesauce and canning, what should I do with them?

How to freeze apples? Do you just peel and core or what? DO I cook them down or what?

Dis, I know you can peel or not, slice and freeze right in freezer bags. We used to do it all the time up north. I remember dipping them in a diluted lemon mix, then freezing them on a big sheet pan; bagging them up.
We used them for apple sauce, baked dishes, breads, pies, desserts, etc.

My friend freezes hers whole. She cores them, skin on, dips, so the inside doesn't brown. Bag up and freeze.

How about apple chips, Easy, just slice and bake. You brush with a simple syrup or cinnamon mix.
I make mine in the dehydrator.

Apple butter, lasts about 2 months or you can freeze it too.

You can puree it too, with a little lemon juice, water; and freeze. Works really good to make a apple chestnut soup.

I agree with KC on the apple butter. There are a few crockpot apple butter recipes on this site you could use and give them as Christmas gifts.

Good idea; yeah I love the butter. Apple butter is great mixed with horseradish sauce and brushed on pork tenderloin or chops. Chicken too. It is really good used in so many ways.

Spread apple butter on puff pastry, top with nuts, cream cheese, and roll. OMG, heaven as a snack or dessert.

You could freeze apple pie filling. That's easy to wrap in puff pastry later for an easy strudel.
Apple butter is always great, but if you're like me, using all the apples on that will be a bit much apple butter.
Don't forget apple dumplings and caramel apples while the season is still spot on for it.
But the apple sauce idea is going to use a lot. I use an old fashioned peeler and a foley mill and make short work of it.
Enjoy your apples! I have a peck of winesap apples on hand. They are my favorite type of all.

Thanks ladies for answering. I peeled and cored all the apples and sliced, rinsed them in water and lemon juice, froze flat on a jelly and put them up that way in gallon bags, so I can grab what I need at a time. I got 4 gallon bags full. So atleast now they are out of my mind and I can relax and use them up as I need them. So happy I spent the day doing this. I was stressed thinking about them!
