Proofing bread dough faster

Use this method when it's cold and it takes longer to proof your bread dough.
If you have a crock pot or slow cooker, fill it half way with hot water, turn on low. Then wrap a cooling rack in aluminum foil and place on top of the crock pot. When you have your bread dough mixed up and ready to rise, just place your bowl covered with a clean kitchen towel on top of the crock pot and foil-covered cooling rack. It will help your dough rise a lot faster, especially when it's cold in the house. Then when you put your dough in the loaf pans, just set them on top of the cooling rack and cover with the same kitchen towel to rise before baking. Voilé!
