I agree half and half. I do think they have a distinct flavor; but I am blinded by my love for them too. But, they really do absorb all flavors.

As I mentioned, like cilantro, you either love it or hate it. I have a friend ... just a little amount she notices. She can't eat it.
So, I guess I do get it.

Eggplant can work; but, it probably would need to be salted and then baked; then added to the dish. The only way, all the moisture would be out of it.

Squash, as mentioned HF, is watery, you know that.

How about chopped up artichoke hearts? The texture is a little similar, and since you' aren't trying to match the flavor. Eggplant is also an idea.
